I’ve never understood boxed Mac & Cheese, a fast and better kids lunch can be thrown together in the same amount of time it takes to open that little orange packet of mystery cheese powder. While a big batch of homemade baked mac & cheese with a white sauce is wonderful, a quick lunch with real cheese and pasta is just as simple without the box.

  • Just boil the noodles (time on the box)–macaroni, rotini, bowtie, whatever they like–add frozen peas, corn or broccoli (optional) in the last minute or two of cooking, drain and add a handful of shredded cheese and a little spoonful of whole milk PLAIN yogurt.

I like Stonyfield Organic Whole Milk Plain Yogurt. Why plain yogurt? It is so much more versatile and healthier. Buying plain yogurt and flavoring it yourself is much much better for you and kids than the added sugar pink stuff. For breakfast, add a little honey and top it with your own berries and granola. Read the label on your strawberry flavored yogurt, does it even contain strawberries? Plain yogurt is also a great substitute for sour cream, we eat it on Baked Potatoes, Chili, Tacos, Oatmeal and in Protein Pancakes. I’m also a believer that whole milk dairy is better than low fat or fat free. It is less processed, more natural, and when they take the fat out of products they usually add sugar to make up for the loss in taste.

Ingredients

  • pasta, any amount
  • frozen peas corn or broccoli (optional)
  • handful of shredded cheese
  • 2 T whole milk plain yogurt

Instructions

  1. Cook pasta according to directions on box. Add frozen or fresh veggies in last minute or 2 of boiling, more if using fresh broccoli)
  2. Drain and add in cheese and yogurt, stir until combined
