My tomatoes are finally ripening, a few at a time, and with a lot more to come. BLT’s are in order, and like my burgers, back home in Wisconsin, they always come with cheese. I was working at a hotel a few years back and got a room service order for a BLT, so I made it and sent it out. A few minutes later the server comes back and says to me, “I didn’t order cheese on this,” so I of course say to him, “um, you didn’t say no cheese,” and we go back and forth a little until I realize “Toto I don’t think we’re in Wisconsin anymore.” It never dawned on me not to put cheese on it, and that’s how you’ll get it if you are eating at our house. With cheese, mayo, and avocado–just for a healthy creaminess. The garden is getting pretty colorful, and soon we will be eating tomatoes with everything, not a bad thing.
Recipe: BLT’s plus C and A (Cheese and Avocado)
- bread, sliced and toasted
- tomato, sliced
- cheese, sliced (such as Cheddar, Swiss, Provolone, Muenster, any)
- avocado, sliced
- Cook your bacon however you like, in a fry pan, in the oven, even in the microwave on a plate with paper towel
- Assemble the sandwiches on toasted bread, with mayo, lettuce, tomato, bacon, sliced avocado and any cheese you like!
