Ingredients & Substitutions
With pantry staples, healthier swaps like real maple syrup, and lots of nutritious apples and applesauce, this quick bread is bound to become a favorite!

- Flour, Almond Flour, Oats - I love the combination of all 3, almond flour and oats add protein.
- Spices - Leaning heavily into the fall baking spices, this apple bread makes your kitchen smell amazing with cinnamon, nutmeg and ginger. If you don't have them all, cinnamon is most important.
- Maple Syrup - Real maple syrup is the sweetener, replacing the need for sugar, and adding deep rich flavor.
- Butter - A little melted butter helps with taste and texture, coconut oil could be subbed.
- Applesauce - Adding sweetness and reducing the need for extra oils, we love using Homemade Applesauce, but store-bought is fine too!
- Fresh Apples - Really any kind of apples are fine for baking! No need to peel, and since they can vary so much in size, just measure 2 cups when chopped.
- Pecan Crumble Topping - The topping is the best part! Hearty with oats and nuts, and the perfect reason to try making your own Homemade Brown Sugar!

Instructions
This oat apple bread is easy to mix up all in one bowl, add the topping, and bake to perfection!

Step 1 - Preheat the oven to 375°F.
Mix the dry ingredients together in a bowl.

Step 2 - Add the wet ingredients and mix to combine.

Step 3 - Chop the apples. Make thin slices, then stack the slices to cut into strips and then cut into small cubes.
Use 2 cups of chopped apples, from about 2 apples, but this can vary by size.

Step 4 - Fold the apples into the batter and transfer to a buttered glass loaf pan.

Step 5 - Mix together the ingredients for the topping.

Step 6 - Crumble the topping over the batter (use your hands!) and bake for about 50 minutes or until done.

Step 7 - Avoid opening the oven door as your apple bread bakes, this can cause the middle to sink when it's trying to rise. You can peak at it after 45 minutes and check that a toothpick comes out clean.
Allow to cool before serving.
Recipe Notes & Tips
- Let it bake, don't open the oven - Really important! This is the trick to letting baked goods fully rise without sinking in the middle. They need consistent heat, so don't open the oven door until it's almost done to check!
- Chopping the Apples - No need to peel, but try to chop your apples as uniform as you can and work quickly so they don't brown. To easily slice apples, make cuts down along the core to get the apple into 4 pieces. Then cut those pieces into thin slices, then stack them and cut into matchstick strips, then chop into small cubes.
- Storage - The apple pecan loaf can be stored right on the counter in the loaf pan, covered for a few days. Refrigerating it will make it last a bit longer. It can also be frozen for 3 months.

- ½ cup flour
- ½ cup almond flour
- 1 cup rolled oats
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 2 teaspoons cinnamon
- ½ teaspoon ginger
- ½ teaspoon nutmeg
- ½ cup applesauce
- ½ cup maple syrup
- 2 Tablespoons butter melted
- 2 eggs
- 1 teaspoon vanilla
- 2 cups apples chopped
For the Crumble Topping
- 2 Tablespoons butter melted
- ⅓ cup rolled oats
- ⅓ cup pecans roughly chopped
- 1 Tablespoon almond flour
- 1 Tablespoon brown sugar
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 375℉.
- Add all dry ingredients to a large bowl and mix.
- Add the remaining ingredients for the bread to the dry ingredients and mix until combined. Include 2 cups chopped apples, about 1½ to 2 medium sized apples, no need to peel.
- Spray or butter a glass loaf pan and pour in the batter.
- For the crumble topping, melt the butter and then mix in all other ingredients. Loosely sprinkle over the loaf.
- Bake for 50 minutes or until done. Allow to cool before serving.
Notes
- Don't open the oven! - This is really important! The bread needs hot consistent heat to rise, so don't peek or open the oven door for at least 45 minutes to check. This can cause your bread to sink in the middle when it's trying to rise.
- Serve it in the Pan - This apple oat bread is super moist and a little crumbly, so it's tricky to remove it from the pan. It's best to just leave it in the pan, let it cool, and scoop your slices out to serve.
