Apple Oat Crumble Bread

Ingredients

  • ½ cup flour
  • ½ cup almond flour
  • 1 cup rolled oats
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon ginger
  • ½ teaspoon nutmeg
  • ½ cup applesauce
  • ½ cup maple syrup
  • 2 Tablespoons butter melted
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups apples chopped

For the Crumble Topping

  • 2 Tablespoons butter melted
  • cup rolled oats
  • cup pecans roughly chopped
  • 1 Tablespoon almond flour
  • 1 Tablespoon brown sugar
  • 1 teaspoon cinnamon

Instructions

  • Preheat oven to 375℉.
  • Add all dry ingredients to a large bowl and mix.
  • Add the remaining ingredients for the bread to the dry ingredients and mix until combined. Include 2 cups chopped apples, about 1½ to 2 medium sized apples, no need to peel.
  • Spray or butter a glass loaf pan and pour in the batter.
  • For the crumble topping, melt the butter and then mix in all other ingredients. Loosely sprinkle over the loaf.
  • Bake for 50 minutes or until done. Allow to cool before serving.

Notes

  • Don't open the oven! - This is really important!  The bread needs hot consistent heat to rise, so don't peek or open the oven door for at least 45 minutes to check.  This can cause your bread to sink in the middle when it's trying to rise.
  • Serve it in the Pan - This apple oat bread is super moist and a little crumbly, so it's tricky to remove it from the pan.  It's best to just leave it in the pan, let it cool, and scoop your slices out to serve.
