My distant cousins were in town a few weeks ago and came for a visit, bringing us a goat cheese snack from the local fancy cheese shop.  We devoured it, the kids played, and we figured out that we are “second cousins once removed”  (family tree connections are a hidden talent of mine).  Being from a large family is pretty incredible.

Here is my recreation of that recipe.  I plan to bring it as an appetizer to Christmas dinner next week.

  • 6 oz goat cheese, crumbled
  • 1 T olive oil
  • 1/4 onion, small dice
  • 3 sprigs fresh thyme
  • 1 T pine nuts
  • 2 T golden raisins
  • 2 T dried cranberry
  • 1 T honey
  • salt and pepper
  • 1T fresh parsley, chopped
  • 1 T red wine vinegar
  • crackers for serving

  1. Heat oil and onion over medium heat in skillet until softened, about 5 minutes
  2. Add thyme and pine nuts, stirring to toast nuts
  3. Add all other ingredients (not the goat cheese) and saute about 5 minutes
  4. Crumbled goat cheese in a dish and top with the warm raisin mixture (remove thyme sprigs)
  5. Serve with crackers
