- 4 cups cooked chicken, shredded (rotisserie chicken works well)
- 3 ribs celery about 1 cup, chopped
- ½ cup onion, yellow or red chopped
- 1 cup red grapes halved
- ½ apple about ½ cup, chopped
- 2 Tablespoons chives chopped
- ½ cup pecans or almonds chopped or sliced
- ½ juice of a lemon
- ¼ teaspoon nutmeg
- ¼ teaspoon cayenne pepper
- ½ teaspoon kosher salt
- 8 grinds freshly ground black pepper freshly ground black pepper
- ½ teaspoon dijon mustard
- ½ cup mayonnaise or more to taste
Combine all ingredients in a large bowl and mix well.
Serve on sandwiches, toast, buns, croissants, deli wraps, crackers or pitas.
- Store in the fridge for up to 4 days.
