- 1 peach
- 1 ball fresh mozzarella pearls
- 4 to 5 slices prosciutto
- 12 leaves fresh basil plus more to garnish
- drizzle balsamic glaze
- 12 wooden skewers
Slice the peach, then cut the slices in half. Slice prosciutto into 3 pieces per slice.
Assemble 12 skewers (or any amount) with peach, mozzarella, prosciutto folded up to fit, a basil leaf, another peach, and another mozzarella pearl.
Arrange on a platter and garnish with basil leaves. Drizzle with balsamic glaze just before serving.
- Allow 2 to 3 skewers per person. So 12 skewers feeds about 4 to 6 people. Easily adjust this amount to feed any size group.
- You can use a large mozzarella ball and cut it into bite sized pieces.
- You can substitute a drizzle of honey and/or balsamic vinegar if you don't have balsamic glaze. Or make your own by simmering ¼ cup of balsamic vinegar with 1 Tablespoon of honey on low for about 5 minutes to reduce it.
- This appetizer can also be made with melon, plums, apricots, pears or tomatoes in place of the peaches.
