Kid Friendly Dinner Sides

Try these easy dinner side dishes that are kid and adult friendly! Kids can be picky and dinners can backfire, but often with kids, simple is better!

Ingredients

  • Lots of Vegetables!!
  • Try potatoes, carrots, squash, broccoli, green beans, kale, cauliflower, sweet potato

Instructions

  • Rainbow Fries -- any root vegetables cut like fries: potato/sweet potato-try purple potatoes, any color carrots, butternut squash, beets, parsnips -- toss with olive oil, salt and pepper and roast at 400° convection bake until done, about 45 minutes
  • Blanched Broccoli or Green Beans -- drop chopped broccoli into boiling salted water for 4 minutes, don't overcook it to mush!, drain and eat, try adding butter or cheese
  • Parmesan Kale Chips -- toss chopped kale with olive oil, salt and pepper and roast at 400° for 7 minutes, crisp but don't burn!  Grate Parmesan cheese over chips when they are hot from the oven so it melts onto them, a microplane works perfectly.
  • Roasted Cauliflower -- toss chopped cauliflower with olive oil, salt and pepper and roast at 425° convection bake until done, about 30 minutes–my kids love it roasted dark brown and crispy
  • Mashed Sweet Potato with Butter and Brown Sugar -- cook like mashed potatoes, boil until soft, drain and mash with butter and brown sugar
  • Roasted Mixed Veggies -- sometimes I just roast a bunch of stuff and hope that everyone will like something - toss with olive oil, salt and pepper and roast at 400° convection bake until done, 30 to 40 minutes, although some things may take longer than others so check on it and pull things out if they are done early.  Try potatoes, mushrooms, bell pepper, cauliflower, broccoli, carrots, asparagus, apples, whatever you have!
