I’ve never actually bought fig spread, but some friends of ours got it for us as a late wedding gift…a very late wedding gift, combined with a baby gift. Regardless, it was a lovely basket of Italian foods (our honeymoon destination), red wine, truffle oil, salami, pesto, some baby gear, and fig spread. So after our first meal of fancy crackers, cheese and salami with the fig spread I thought I’d mix it up and take it to breakfast. The sweet fruit with the salty ham and ooozy egg yolk is my kind of mixture, but I guess not for everyone, my husband asked for his ham and eggs plain!
Recipe: Ham and Eggs with Fig Spread
- 1 slice of toast
- 2 T fig spread
- 2 slices deli ham
- 1 egg
- salt and pepper
- Spread toasted bread with fig spread
- Saute ham in skillet for 1 minute per side and add to toast
- Fry egg to desired doneness and season with salt and pepper. Place on top of ham.
